The Carob Tree (Ceratonia siliqua), thought to be a native of Oman, has spread throughout the Mediterranean countries as a food source. The pulp of the pods (seeds removed) is used in many ways but is best known in the West as a substitute for chocolate.

An evergreen legume that prefers well-drained soil, a sunny position and sufficient summer water, it grows to 10 metres with a spread of  4 metres carrying a broad, low, densely textured crown. It has glossy, dark green foliage that is formed of pinnate leaves with three pairs of rounded leaflets. The flowers are small, red, appearing in dense clusters followed by flat pods 30cm long which ripen in winter.

This fruit pulp of this tree is used as a food source and some say it was the ‘Manna from Heaven’ of the Bible. It is also known as St. John’s Bread and is said to have sustained St. John in the wilderness. The name Carob comes from the Arabic ‘Kharrubah’ and the hard seeds were traditionally used as jeweller’s measure of weight, which may have a connection to the word ‘carat’ still used today.
